As you can see by the pictures, last night was our Mosaic Holiday party for the Charleston crew. Special thanks to Santa for making a last minute appearance (during a VERY busy week for him) and to all our associates for making the event such a success! Thanks for a great year!

Klok Law Firm Holiday Dinner - Charleston






Special thanks to the Klok Law Firm in Charleston, SC for purchasing the "Catered Dinner for 20" auction item at the AFFA fundraiser last month. The dinner took place last night (in spite of the torrential rains) and everyone had a wonderful time. Mosaic associates Ali, Catie and Michael did an amazing job decorating and serving. Thanks also to Doug Warner and Truman Smith who opened their home to host the event and provided all wine, beer and liquor. It was also a chance show-off our new "pickling jar" individual desserts!

Thanks to everyone for their continued support of the AFFA organization and the amazing work they continue to do in our community.

English Muffin Bread is coming!


I have been experimenting with my English Muffin Bread recipe (actually my Mother has been too thank goodness), trying to incorporate a new double fiber, ultra grain flour. Getting close so look for it on the new brunch menu soon....we hope!

December Specials!


I am really excited to share some of these all new specials for December. After such great feedback on our Butternut Squash Soup, I have brought back another vegetarian favorite from the past, Black Bean & Chocolate Chili. The spicy Mexican chocolate is the perfect sweet/hot compliment to the chili seasoning. With the addition of sweet red and yellow bell peppers, this is a soup that you have to try for yourself! Chocolate Challah Bread Pudding is our dessert of the month, and Pumpkin-Ginger Snap Tiramisu has been added to the regular dessert menu.

Our famous Turkey Reuben Pita is back, this time with melted smoked gouda cheese. The salad this month is an amazing hot Bacon, Apple and Chicken Spinach Salad tossed in a zesty Sherry Vinaigrette Dressing. Garnished with cranberries and feta, this salad is as beautiful as it is tasty. If you are a salmon fan, the Firecracker Salmon dinner special is the best fish recipe I have used in a long time. The combination of sweet brown sugar, hot red pepper, soy sauce and fresh ginger and herbs provides and amazing depth of flavor. Anything but Turkey!?!


Well if you're anything like me, you are probably looking for something to eat that does not involve turkey, dressing or anything gravy (at least for the next few days). Ryan reminded me about this quick lasagna recipe that is remarkably easy and delicious. You can adjust it to your taste with flavored sauces, pepper flakes, additional cheeses or meat/vegetable substitutions.... Just watch the moisture content - you have to have enough liquid to get the noodles done. We will all have plenty of time to enjoy the turkey next week. More to come!

Charleston Mosaic Catering



We had a great time at the AFFA event at Memminger Auditorium this weekend. We were one of 10 restaurants that donated our product and staff to this wonderful organization for their 11th anniversary gala. Additionally, for the live auction, Mosaic teamed up with Doug W. and Truman S. to offer a small dinner party on the river that fetched the highest price paid all night! Thanks to Eric, Ali, Michael and all the staff who represented Mosaic so well...you made us all very proud!

Black Bean & Chocolate Chili



This is an old favorite that i revived as a vegetarian option for a catered event this past weekend. I had forgotten how good it was and since it is chili weather, thought I should share. Dont be afraid of the long list of ingredients. Most of them are in your pantry already and the payoff is a GREAT vegetarian soup with a real depth of flavor. Let me know how it works for all!
